I created a DB in the wizard and it says "completed' - but never asked what type or how many fields.
Does it know automatically when my data hopefully starts flowing in?

Obviously the database needs to be told the tables, the fields, and their types. Your database was probably created but is empty (no tables). You can go into phpMyAdmin (if this is a MySQL database) and see what's there, and manually create the tables and their fields. Nothing [good] will happen when your data just "starts flowing in" if their are no tables.
