i run a forum site and was wondering what directories to password protect in control panel

For security i would password protect the admin directory(commonly /admin or /acp).

Other then that, just any directory with sensitive information. If its nothing personal, or confidential, and you don't mind the whole world seeing it, there isnt a need in password protecting it.
 
Also, to keep directories from being shown(list of files in /folder) turn directory index off, or make a blank index.html in that directory.
