Currently I'm accessing my account via ftp which sends my username and password in the clear, as well as any embedded passwords in my code.   Is there a way to turn on sftp access?

Usually turning on SFTP is just changing the port to 22. If your in Filezilla select SFTP and enter your primary username and password. If you are on a shared server then someone may know better then me, although VPS and dedicated works just fine like that.
