I'm just starting out with a website and plan to have several in the near future.  I have no practical experience yet, but lunarpages has been recommended to me as 'a fantastic' hosting service but: 

from what I see before signing up, it looks like the hosting services seem to be very Windows orientated and I am on a MacBook Pro.  Will this cause me additional set up and running problems to solve while trying to learn/sort out everything else? I've done several searches here, but haven't found any info on this topic.

The only real differences would be the programs you use to create your website files and upload those files. The hosting accounts, depending which one you choose are Linux or Windows based and the content would run on the servers themselves. The type of machine you have, Mac or PC would not affect how the files run on the actual server.
