I have a potential client that is requesting to add both Streaming Audio & Video and Podcasts to their websites. They are church that has a server in house (which I know nothing about yet) but they've expressed interest in purchasing a server externally. I imagine the video streaming will only be 1-2 times per week but they have a VERY large following so they probably will get quite a few viewers.
I'm wondering (ballpark) what kind of server requirements they would need. I know I haven't given you a lot of info but any advise would help when I meet with them.

If you are referring to a full streaming hosting solution for running something like Shoutcast you would need a fully Dedicated Plan or VPS at minimum. If a progressive media streaming type of setup would be adequate you may be able to use a shared plan (Basic or Business Plan). You may also want to check this link;
