Does anyone know what software LP uses to produce the online training videos?  I've seen this look and feel on other sites and would like to possible use it on one of my new sites for training videos.

Not sure exactly, however if you need some free software to record your desktop (then you could dump the video into video editor later to clean it up) I would recommend checking out CamStudio:
